Longstocking Brewery

Longstocking Brewery opened in 2016 and operated as a micro brewery until 2018 when current owners Pete and Joey took over an expended the operations.

Grassy Knoll

2018 saw Grassy Knoll's first contract brew with Vince at Frenchies Bistro and Brewery which is located in Rosebery, Sydney. This became a regular contract whilst head brewer, Jeff, also worked with Frenchies  helping out with their brews for the next year and a half. After a move to Wollongong in late 2019, Jeff saw the need to brew somewhere locally in Wollongong and to avoid those 4am starts driving to sydney. Luckily through a common history, studying brewing at TAFE with Mick from Bulli Brewing, Grassy Knoll began a working relationship brewing out of the Unanderra brewery in mid 2020. This has had the bonus of being local and has also given us the opportunity to brew and manage the quality of all our own beers. Like with any good story, the Grassy Knoll one is always evolving and we hope to open our very own brewery in the near future.

Reub Goldberg Brewing Machine

Opened 2018

Our Brew Machine is custom designed and built by beer nerds, for beer nerds. It has been specifically created to allow for maximum enjoyment of the brewing process - more hands on with visual and smellable action. It utilises gravity wherever possible, and, unusually for a commercial system all the valves are turned by hand. As well as allowing the brewer to feel immersed in their craft, the Brew Machine is designed to allow great flexibility and control over the brewing process which helps us to perfect our recipes or change it up as required.

Stoic Brewing

Gerringong locals, Father and Son Steve and Andrew, founded Stoic in 2018 with a vision of creating a space where the community can come together and enjoy locally brewed beer and cider in amongst the vats. A place that feels like home with a community of people that feel like family.

Resin Brewing

Bulli Railway Guest House. Once derelict, this historic building on the train line dates back to 1887, previously welcoming tourists to the region with an abiding tradition of hospitality.

Resin Brewing bought the Railway Guest House site in 2017. We spent two long years transforming the crumbling, termite infested, graffiti-scrawled building into the microbrewery and brewpub we dreamed of, with a design that conserves the rich heritage of the site.

Tilba Brewing Co

Tilba Brewing Co. was born in June 2021 (so, officially a Covid pandemic lockdown project!). Their beers are brewed with their partners at Stoic Brewing ans are served exclusively at the Dromedary Hotel which is over 120 years old.


The Dromedary Hotel was built in Central Tilba in 1895 for Jim and Emma  Livingstone. Both from NSW, Emma Livingstone, nee Southam, was born in Tilba Tilba in 1862.  It is said that The Drom was built from wood recycled from the ships that docked at Bermagui harbour. Originally built not as a pub but a coffee palace, The Drom was originally called The Palace Hotel. In 1936 the pub was renamed Hotel Dromedary after nearby Mount Dromedary. The signboards were removed from the building during World War II; when they were replaced in 1946 the owners at that time decided to change the name to the Dromedary Hotel, after nearby Mount Dromedary. You can read more history about the Dromedary Hotel here. Tilba Brewing now brew a number of beers for sale at the Dromedary Hotel and available in some local bottle shops.

 

Broulee Brewhouse

Broulee Brewhouse opened it's doors on 9 December 2021 and straight into holiday busy periods. The venue is a purpose built brewery with a fantastic indoor/outdoor vibe, we have a lively beer garden that is sunny, open and relaxed. They joined the South Coast Ale Trail in April 2022
